matcha ice cream sandwiches are vegan, creamy, perfectly sweet and delicious. I love matcha ice cream so felt it was only fair I shared what I’ve been enjoying in the past few months.
These sandwiches aren’t difficult to make but they do take some time because it’s a multistep process.
Begin by making the matcha ice cream in your blender. Next, let it firm up in the freezer while you bake and cool your cookies. Finally, assemble the sandwiches and enjoy!
INSTRUCTIONS
Matcha Ice Cream
Cookies
1. Preheat oven to 350F.
2. In a large bowl combine cassava flour, tapioca starch, baking soda and sea salt. Add melted coconut oil and maple syrup and mix to combine.
3. Using your hands, roll the batter into 1 inch balls and place on a parchment lined baking sheet. Flatten each cookie with your hand to an even thickness about 1/4- inch thick.*
4. Bake on middle rack of oven for 10-12 minutes or until the edges begin to turn slightly golden in colour.
5. Remove from oven and let cool completely before handling or they will crumble.
