This matcha chia seed pudding has been on repeat for me lately. I love the earthy flavor the matcha provides.

It makes for a fresh breakfast option in the morning and pairs so well with fruit and granola.

A drizzle of vegan yogurt on top would really take it over the edge.

You only need 5 ingredients to make this matcha chia pudding! Here’s what you need:

        • Chia seeds. You can’t make chia seed pudding without chia seeds! They’re a little nutrition powerhouse filled with protein, fat and fiber.
        • Non-dairy milk. You can use any variety you’d like, but I recommend going for unsweetened as we’ll be adding our own sweetener.
        • Matcha green tea powder. I love that matcha provides a slow, stable boost of energy compared to coffee, and it lends such a delicious flavor to this chia pudding recipe!
        • Sweetener. You can use any sweetener you like for this matcha chia pudding. I recommend maple syrup or a few drops of liquid stevia extract.
        • Vanilla extract. A touch of vanilla will make this chia seed pudding taste like a matcha latte from your favorite cafe.

It just doesn’t get easier than chia seed pudding. Truly. This is one of those recipe where you just mix it up, pop it in the fridge and forget about it! The hardest part of this recipe is honestly remembering to make it the night before because it does have to sit for a few hours.

Here’s how to make this matcha chia pudding recipe:

        1. Mix chia seeds and non-dairy milkin a bowl, making sure to break up any chia seed clusters that form
        2. Whisk matcha powder and warm watertogether in a separate bowl and mix until smooth
        3. Add the matcha mixture, maple syrup and vanilla to the chia seed mixture, mix until well combined and then pop it in the fridge overnight, or at least for 2-3 hours

Once you’re ready to enjoy your matcha chia seed pudding, I highly recommend topping it off with your favorite fresh fruit, granola, nuts or a scoop of non-dairy yogurt.
